Ingredients
Glazed whole Turkey
Whole Turkey 8 lb
Corn bread 2 lb
Walnuts 1 lb
Chorizo 1 lb
Mushrooms 1 lb
Peach, canned 1 lb
Eggs3 ea
Milk 5 fl oz
Cinnamon powder 0.5 oz
Orange juice 5 fl oz
Olive oil 2 fl oz
Oregano 0.5 oz
Thyme, chopped 0.5 oz
Honey 2 fl oz
Brown sugar 3 oz
Salt & pepper
Sweet Potato Walnut plantain Tart
Sweet potato, diced, blanced 2 lb
Walnuts, roasted 8 oz
Nutmeg, 0.1 oz
Salt & pepper
Butter,5 oz
Plantain ripe, fried 3 ea
Sauteed green beans
Green beans, blanced 1.2 lb
Red onion, julienne, 12 oz
Cherry grape tomato 6 oz
Olive oil, 1 fl oz
Salt & pepper
Instructions
Glazed whole Turkey
Rub the whole turkey with a mix of cinnamon, oregano, honey, olive oil, thyme, brown sugar, salt & pepper and orange juice.
Soak the corn bread in the milk and add the sautéed mushrooms, chorizo, walnuts, peach and eggs, bring the stuffing to the taste with salt & pepper
Stuff the turkey with the stuffing and bake it in the oven in 2 hours on 165 c, the first 1.5 hour with aluminum foil on top, the last half hour without.
Take the baking juice of the Turkey from the pan and reduce it in a sautéed pan with orange zeste and bring the gravy to the taste with salt & pepper
Sweet Potato Walnut plantain Tart
Place the fried plantain in a ring on the bottom and on the top side
Mix all the other the ingredients in a bowl and place the in a ring and bake of in the oven on 160 c for 12 minutes.
Sauteed green beans
Sauteed all the ingredients in a little olive oil for 3 minutes and bring to the taste with salt & pepper
